Hummingbird Tree (Agathi Tree) Yellow Curry

1 bunch Hummingbird tree leaves (they come with the stems)
2 shallots
2 tbsp coconut milk
½ cup water
¼ tsp turmeric powder
Salt to taste

Agathi Yellow (White) Curry

Remove the elongated leaves, fresh and green in colour, from their stems and wash them gently in cold water.
Add all the ingredients in a pot and bring it to a boil. Don’t overcook.
The liquidy sauce and the leaves will have a bitter taste to them.
