Bitter Gourd (Bitter Melon) Thick Curry




½ bitter gourd, diced into small pieces
1 red tomato, diced fine
½ onion, sliced lengthwise
5 curry leaves
¼ tbsp. of curry powder (optional)
2 tbsp of coconut milk
1 cup of water
Salt to taste




Add all the ingredients in a pot and bring it to a boil. Let it simmer. The bitter gourd, as the name suggests, is bitter but longer simmering will soften it and make a dent in the bitterness. You can also add more coconut milk to reduce the bitterness but then the purpose of the dish will be lost.
